3 tablespoons olive oil
1 eggplant, ends trimmed, cut into 1-inch slices
3 ounces feta cheese
1/3 cup basil, sliced
3 tablespoons extra-virgin olive oil
2 table spoons freshly-squeezed lemon juice
3 tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
- Place a grill pan over medium-high heat or preheat an outdoor grill. Coat the eggplant cubes in olive oil. Grill the eggplants until tender and grill marks appear, about 2 to 4 minutes per side (depending on the grill).
- Place eggplant cubes on a serving platter. Sprinkle with feta, basil, and lemon juice. Drizzle with extra-virgin olive oil, balsamic vinegar, salt, and pepper.
